Meaty Dishes

  • Roasted Beef Topside: Braised Ox Cheek and Beef Dripping Potato Dumpling
  • Pork Belly and Scratchings: Confit Pork Belly, Caramelized with Cabbage and Bacon
  • Pot Roasted Chicken: Half Chicken slowly steamed in stock and aromats
  • Confit Duck Leg: Sussex Duck Leg cooked slowly in Duck Fat

Veggie and Vegan Dishes

  • Tofu, Aubergine and Courgette Cake, roasted, pressed, baked and charred (VG option available)
  • Puy Lentils and Barley Parmentier: Puy Lentils, cooked with Pearl Barley, Herbs and Spices, topped with Creamy potatoes (VG option available)
  • Wild Mushroom Vol Au Vent: Mushrooms cooked in Almond Creamy Sauce and served in pastry tower (VG option available)
  • Roast Halloumi, cooked in foaming butter (V)

Each dish is served with a Yorkie and Cauli Cheese (except for the vegan dishes), Steamed Greens, Red Cabbage and Roasted Onion.

Throw in extra Yorkshires or cauli cheese, pick a side and indulge in delicious cod croquettes or simply add some tasty sweet potato fries; the choice is yours! About Croustillant D @ The Seven Stars

Prepare yourself for quirky cooking from Englishmen invaded by the French, classic flavours mixed with modern techniques, delivering flavour and tantalising tummies. Expect to be hypnotised by their innovative plates and warmed with satisfaction. Traditional classics served with a crispy coating of love! Chef, Christian aka Chrisdave began cooking as a kid but then went on to train and learn his trade in the bustling kitchens in the south of France and The French Alps. Later Chrisdave went on to spend 5 years working in London, at establishments such as The Delaunay, Berners Tavern and Le Pont de la Tour. Last year Chris moved back to Brighton and worked at the acclaimed restaurant, The Pass, in The South Lodge Hotel before moving on to create his Pop Up Croustillant D. Sebastian, the younger brother of Christian, has been around the Brighton pub/restaurant scene for a number of years now after a spell in France, heading up The Tempest Inn, The Three Little Birds and more recently The Lord Nelson Inn. He also has a background in baking, and cooks a mean Roast Dinner!
