Falafel King is a Wriggle favourite and creates gorgeous Middle Eastern food that's veggie and vegan. If you're craving punchy flavours, warm and crunch falafel and lashings of hummous, this is the place for you. 

Chef Tomer has introduced his amazing Cauliflower Cloud and is kindly sharing the recipe with us, it's a simple delicious dish, great for sharing with friends. 

You will need:

1 large cauliflower 

Rock salt 

Crushed black pepper 

1 head of garlic 

Olive oil 

Raw tahini 

Method: 

First boil water in a large pot. Once the water comes to a boil add the cauliflower with a pinch of salt. Simmer for approximately 25 mins. 

Takeout the cauliflower and place under cold water too cool. 

Prepare oven at 180 degrees. 

Crush 3-4 cloves of garlic, add olive oil, salt and black pepper to the mix. 

Place cauliflower on a baking tray and brush the mix and cover the entire cauliflower. 

Bake in the oven for approximately 25 mins until golden. 

To make the tahini sauce, take the raw tahini and add the lemon juice, 2 table spoons of water, 1 teaspoon of olive oil, 1 teaspoon of fine salt, 2 cloves of garlic. Please adjust amounts according to personal taste. 

To serve: 

Place the whole cauliflower on a large serving dish. Pour the tahini sauce on the top and let it drip down to cover. Garnish with chopped parsley and coriander. And enjoy!
