CHAI (formerly Chaiholics) has always had a strong reputation for its tea-based cocktails, but the arrival of Welsh Curry Chef of the Year Pramod Nair has taken the kitchen in a whole new direction. You can graze on small plates or tuck in to a more formal meal, but either way you're in for a treat. The flavours of Kerala are very much to the fore, the bite of chilli tempered with coconut. It's not easy to pick a standout dish, but Truck Stop Chicken is chef's signature.
