The flavours, ingredients and techniques of Sardinian are vitally important to Zanky's; head chef Fabio was taught to cook by his Sardinian grandfather, and the beautiful Italian island still exerts a clear influence on Fabio's cookery today. Traditional Italian and Sardinian ingredients are sourced from specialist delis and suppliers, and the dishes in the restaurant hinge upon traditional cooking methods, with unctuous, slow-braised meaty sauces often assuming the leading role.
