This isn’t some dastardly plot to rid the world of choice. More a belief in putting all their energy into crafting one thing the best they possibly can. Pizza’s the name of the game in this extremely stylish operation – 100% sourdough base with no added yeast, slowly risen over 30 hours, resulting in an incredibly light and delicious dough – topped with homemade tomato sauce using San Marzano tomatoes, finest Italian cheeses and extra virgin olive oil.
Now they’ve nailed pizza, they’ve added ‘Bocca’: essentially a pizza sandwich, made from the same sourdough, baked in the oven and served piping hot and oozing with cheese. Wash ‘em all down with some local craft beer, soft drinks or well priced wine.
