Pistrina is a family-run business started by the founder and Head Baker Charlie Johnston. Charlie has over a decade of baking and cooking experience working in some of the best restaurants in the world.
Whilst working at such restaurants as Gordon Ramsay at Claridge’s and as Head Baker at In de Wulf, which at the time was the second best restaurant in Europe, Charlie developed an in-depth knowledge of the microbiology of sourdough. His primary focus was on gut health in order to achieve the most nutritious sourdough possible - and we're glad he did!
