Founded by Ruth Christianson in 2014, Maize Blaze was launched in energetic Camden Market. Now, Maize Blaze brings exciting Colombian cuisine to Bristol - setting up shop in Stokes Croft's Corner 77.
Ruth's food is inspired by her early childhood growing up in Bogota, Colombia. She developed her cooking and experiences in the heart of London’s dynamic street food scene. As Maize Blaze expands, it is quickly setting the standard for dynamic Colombian street food. These vibrant dishes are 100% gluten free, and there are many delicious vegan and vegetarian options.
Ruth is defiantly committed to both food quality and the service that she and her staff provides. It is important to Ruth that the business supports charities in the U.K. and in Colombia. This, in addition to an emphasis on sustainability and supporting local producers, shines through her culinary fusions.
Absolutely love Maize Blaze - the food is delicious and the oweners are very friendly. Everything is gluten free and plenty of meat, veggie and vegan options too!

Food was superb and incredibly filling. Staff at the bar and the kitchen were very friendly and helpful. Also very welcoming with dogs and children.
The food and service were good. And the band playing good music is a bonus.
Great location
Well worth a wriggle. Pretentious breakfasts are two a penny down stokes croft, but this was an interesting and well priced breakfast (with a wriggle code) with a nice balance that would suit everyone from hungover uni idiots to vegan health freaks and everything in between. Simply scrumptious.
